You wake up. Its a Saturday. You’re ready to get the weekend started off special, but you’re at a loss for great breakfast inspiration. Let us help you out. These mini chocolate brownie pancakes are delicious, healthy, easy, and the perfect size. Check every box? Treat yourself to a breakfast fit for royalty.

Mini Chocolate Brownie Pancakes

1 banana
1 egg
2 tbsp melted coconut oil
2 tbsp maple syrup
1 tsp vanilla extract
1/2 cup flour
1 tsp baking soda
2 tbsp unsweetened cocoa
¼ tsp salt
almond milk as needed
Mash the banana, melted coconut oil maple syrup, and egg together. Sift together the flour, baking soda, cocoa, and salt. Combine the wet and dry ingredients together, adding milk to reach your desired consistency.  Pour ¼ cup of batter onto your griddle and cook until tender. Serve with Chocolate sauce.

Tip: Fresh raspberries add a nice touch to the experience!

Chocolate Sauce

1 cup coconut milk (full fat)
1 cup dark chocolate chips
1 tsp vanilla
Blend everything in a blender until smooth and warm (about 5 minutes). Pour over Pancakes!
