There aren’t many flavors that embody summer as much as lemon. From lemonade to lemon Italian ices, its refreshing acidic sensation is nearly synonymous to sunshine.

Healthier Lemon Poppy Seed Cake
½ lemon, juiced and zested
2 cups whole wheat flour
2 tbsp poppy seeds
1 tsp baking powder
1 tsp baking soda
1 tbsp melted coconut oil
1 tbsp flax
3 tbsp water
⅓ cup maple syrup
⅔ cup Greek yogurt
¼ cup organic powdered cane sugar
2 tsp lemon juice
Mix dry ingredients together in a medium bowl. Whisk together wet ingredients in a separate bowl. Add wet ingredients to dry and mix until just incorporated. Pour mixture into a parchment-lined loaf pan and bake at 350 degrees for about 40 minutes. Sprinkle zest on top.
Mix glaze in a small bowl adding more lemon juice or powdered sugar for a thinner or thicker glaze and then drizzle over the cake.
Chef Tip: Prior to glazing, allow a few minutes for the cake to cool. This will prevent the glaze from melting!
