Zest Lemon Poppy Seed Cake Recipe

There aren’t many flavors that embody summer as much as lemon. From lemonade to lemon Italian ices, its refreshing acidic sensation is nearly synonymous to sunshine.

One of the pitfalls of lemon is the fact that recipes centered around it often call for excess sugar and oil. To help you start your summer off on the right foot, Dash has Check out this fun lemon poppy seed cake recipe! It has much less oil compared to other recipes!

Healthier Lemon Poppy Seed Cake


½ lemon, juiced and zested

2 cups whole wheat flour

2 tbsp poppy seeds

1 tsp baking powder

1 tsp baking soda

1 tbsp melted coconut oil

1 tbsp flax

3 tbsp water

⅓ cup maple syrup

⅔ cup Greek yogurt


¼ cup organic powdered cane sugar

2 tsp lemon juice


Mix dry ingredients together in a medium bowl. Whisk together wet ingredients in a separate bowl. Add wet ingredients to dry and mix until just incorporated. Pour mixture into a parchment-lined loaf pan and bake at 350 degrees for about 40 minutes. Sprinkle zest on top.

Mix glaze in a small bowl adding more lemon juice or powdered sugar for a thinner or thicker glaze and then drizzle over the cake.

Chef Tip: Prior to glazing, allow a few minutes for the cake to cool. This will prevent the glaze from melting!
