This pie, we cannot tell a lie, is bananas good. Not only is it completely vegan and made with all unprocessed ingredients, this pie is so easy to make that we wondered how on earth such a recipe could have passed us by for so long. Enjoy this pie for a creamy dessert, or even for a substantial breakfast. Talk about starting the day right!

Vegan Banana Mousse Pie

1 cup walnuts
1 cup dates
2 tbsp cocoa powder

Mousse Filling
2 small bananas
1 cup cashews, soaked overnight
⅓ cup maple syrup
2 tbsp lemon juice
¼ cup coconut oil
¼ cup coconut milk
1 tsp vanilla extract

2 bananas
whipped coconut cream (optional)

Blend the crust ingredients in a blender until well combined. Press crust out into an 8x8 square pan lined with parchment paper and set in freezer. Blend the mousse ingredients in a blender until perfectly creamy. Pour mixture into crust and freeze for at least 4 hours. Before serving, slice up 2 bananas for the top.
