Every Dad Has His Day

Father’s Day is right around the corner! Honestly, our dads do so much for us. That's why we dedicate a whole day to saying thanks for everything! I am excited to celebrate Father’s Day because my dad makes amazing jokes, is the most mechanically inclined in our family, and is always willing to help my sister and me.

To thank your dad for all that he does, why not make him a nice, healthy breakfast? Food is always a great way to the heart! Here are a few of our favorite breakfast recipes that you can whip up to show dad just how much you care!

 

Dad will be sure to love a hearty breakfast sandwich. This sandwich will be all he “avo” wanted!

Breakfast Avocado Sandwich

Ingredients:

½ avocado

1 egg

¼ small red onion, cut in thin rings

¼ teaspoon sea salt

1 bunch fresh parsley, chopped

½ lime

Freshly ground black pepper

1 whole wheat bun

 

Directions:

Cut and peel avocado, arrange slices on the whole wheat bun.

Top with red onion and parsley.

Cook an egg in the mini maker for one minute until the white is set, but the yolk is still partially runny. Scoop egg on top of sandwich.

Garnish with a squeeze of lime and sprinkle of salt and pepper.

 

If he has more of a sweet tooth, why not make some waffles? We are sure he’ll love them a “waffle” lot!

 

Sweet Potato Waffles

Ingredients:

4 eggs

1/2 cup mashed sweet potato

1 tablespoon maple syrup

1 teaspoon vanilla extract

½ teaspoon cinnamon

¼ cup coconut flour

1 tablespoon coconut oil

 

Directions:

Use the Dash hand mixer to mix the eggs and sweet potato together.

Add the maple syrup, vanilla, cinnamon, and coconut flour.

Mix again.

Grease the Dash mini maker waffle with coconut oil and cook ¼ cup of the batter at a time.

 

Lastly, Here is a great gluten free recipe! Holy crepe, this will totally be a hit!

 

Gluten Free Crepes

Ingredients:

2 eggs

1¼ cup gluten free flour mix

1 cup almond milk

1 teaspoon vanilla extract

½ teaspoon almond extract

2 tablespoons safflower oil.

Berries for filling

 

Directions:

Place all ingredients except berries in the dash blender and pulse to combine.

Heat the Dash skillet to medium high heat, grease with a little coconut oil and pour ¼ cup of batter on the skillet.

Swirl to make a thin circle.

Cook 1-2 minutes and flip.

Cook another minute and set on a cooling rack.

Fill crepes with fresh berries, bananas, jam, cream, chocolate, etc.
