One Pot Wonders

Sometimes its not enough to plan perfectly for a delicious week of well-balanced meals. We get back from work or a day of classes and feel drained. All that meal prepping and new recipe ideas go down the drain...and take-out is so easy! At Dash, we feel you there. That's why we wanted to make it easy for you to prepare meals quickly AND keep them healthy!

Using just one appliance makes preparing a healthy breakfast, lunch, or dinner so much more convenient. Because you don't have to use any extra pots or pans, it almost feels effortless, especially when thinking about dishes! Not only does using one appliance make your meal prep easier, but it also means spending less money on take-out, which can include unnecessary oils and ingredients.

Homemade Miso Ramen

Ingredients:
1 (8 oz) package ramen noodles
1 tsp sesame oil
3 cloves garlic, minced
¼ onion, diced
2-3 shiitake (or shimeji) mushrooms, sliced
½ cup bok choy
3 cups chicken or vegetable broth
½ - 1 tbsp soy sauce (or more to taste)
2 tbsp miso paste
½ cup tofu, cut into ½” cubes
2 boiled eggs (optional)

Optional garnishes: chives, sesame seeds

Directions:
Cook noodles according to package instructions and then rinse with cold water. Divide noodles into 2 bowls and set aside.

Heat oil in Express Hot Pot over medium-high heat. Once oil is hot, add garlic and onion and saute until fragrant. Carefully add broth, bok choy and shiitake mushrooms and bring to a boil. Lower heat to medium. After a few minutes, add tofu. When mushroom and bok choy are tender, remove from heat. Stir in miso paste and soy sauce to taste.

Pour broth over noodles, top with egg and serve immediately.

Mac & Cheese

Ingredients:
1 1/2 cups whole milk
1-1 3/4 cups water
8 oz small elbow macaroni
1/2 tsp salt
4 ounces extra-sharp cheddar, grated (about 1 cup, packed)

Directions:
In your Express Hot Pot at medium heat, combine milk, 1 cup water, macaroni, and salt. Bring to a low simmer, stirring to prevent the macaroni from clumping and the milk from boiling over. Once the mixture simmers, reduce heat to low and stir continuously for about 8 to 10 minutes. The macaroni will absorb the liquid while cooking, so stir in additional water as needed, 1/4 cup at a time.

Once pasta is done and the sauce is creamy, turn off the heat and gradually stir in the grated cheddar, 1/3 cup at a time, until smooth and melted.
