Gluten-Free Avocado Fries

Ingredients:

1 firm avocado
¼ cup oat flour
¼ tsp sea salt
¼ tsp black pepper
1 egg
1 cup panko breadcrumbs (gluten-free)

Directions:

Slice the avocado into 12 slices. Mix the oat flour, sea salt, and black pepper in a shallow bowl. Whisk the egg in a separate bowl. Pour panko breadcrumbs in another bowl. Dip the avocado slices in the flour mixture, then the egg, and finally the panko breadcrumbs. Place slices on a parchment-lined baking sheet and bake for 25 minutes at 350º. Remember to flip the avocado slices after 12 minutes. Enjoy!
